The Holiday Bikini – A Recipe

We present an easy interpretation of a drink from the seasonal cocktail list. This is a large-volume premix which is loaded with the tastes of a holiday season, which makes it excellent for hosting a celebration. Save the extra syrup for brunch beverages, sweets, or for more rounds of the drink.

Bikini

Serves 10 people

To make the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Method

For the Citrus Syrup: Place all the items into a pan, bring to a gentle boil, stirring until the sugar dissolves. Then, remove from the heat allowing it to reach room temperature completely. Pour into a sealable bottle, seal keeping it chilled, it will last for around four weeks.

Preparing the Cocktail Base: Pour the specified liquids into a sizeable container, let it rest for one hour, then pass it through preferably using muslin, making it perfectly clear.

When ready to serve: Add 85ml of the cocktail base into a cocktail shaker filled with ice, gently stirring lightly for a minute to cool it down. Pour to a frosted cocktail glass or similar, top with a few cranberries and complete it with a quick spritz with the mandarin essence over the top.
